So I've gone vegan. It's been about a week and so far so good. I figure being vegetarian for 13 years means I should take the next step. But cheesey pizza how I miss you, and have yet to figure out a proper substitute. Here's a photo of my vegan "egg salad" which is tofu, vegan mayo (almond milk and olive oil), celery, onion, relish, dijon mustard,  and assorted spices. It was delicious!
